Majestique Healthy Holidays! Melba's Collard Greens and Turkey Wings

Everyone knows that I TRY to eat a little healthier, so when I come across a yummy recipe with a healthy twist, I like to share it! I found this one years ago in a cookbook from The National Council of Negro Women's Black Family Cookbook. It was the recipe I used when I first attempted to make my greens without the tradtional smoked pork. I have to say, it was quite YUMMY! Yummy enough where I have been doing it like this for the past 20 years. Enjoy!

Melba’s Collard Greens and Turkey Wings


3 pounds fresh collard greens
About 2 cups water
1 medium onion, chopped
1/2 pound smoked turkey wings
1-2 tablespoons sugar
pepper
Garlic powder
Salt-substitute seasoning

Soak and wash collard greens. Remove all grit, remove hard stems. Place greens together in small bunches. Roll together. Cut crosswise into wide strips.

Place greens, water, onion, and turkey wings in large pot. Season with sugar, pepper, garlic and salt-substitute seasoning.
Cook until greens are soft and tender.

Nutrition Content per serving:
Calories 175/ carbohydrates 21 g/ fat 6 g/
protein 10g/ cholesterol 30mg/ saturated fat 1g/ sodium 448 mg

TAX TIPS FROM A. JACK-JONES!



TAX SEASON IS HERE....!

Here are a few reminders to get you better
prepared (this is a 5-7 day-preparation process- the saving process is
not included).

1.Taxpayers start getting your tax deductible vouchers and receipts in
order according to category ( 1-2 days).

2.Call your mortgage company to see if your statement is available
online prior to 31 January(15-30 min on the phone).

3.If you are a tither at church ask your head Deacon when your financial statements will be available; do you need to pick it up or will it be mailed (this is 15 minutes after Sunday service).

4.Research (2-3 day process)how you would like to have your taxes
prepared.
*Local FREE services are usually available in the
community-usually for those with a limited income ($30K or less).
*Check Staples, Office Depot, or purchase them online download
to your PC (Turbo Tax, TaxCut and TaxACT).
*Do-it Yourself Income Tax Preparation Services Online(Complete
Tax, H&R Block, Rapid Tax & The Masters Tax Service)

5.Get you tax forms online at www.irs.gov if you are doing them by hand
(1 day- if you do not have access to a computer go to your local library
with $3 in change to use the printer- Cost is usually about $.15 to .30
cents a page).

6.Put some cash aside to purchase from the store and for those of you
that got rid of the credit card (CC)this year you can use paypal (many
online purchases depots use paypal-they can deduct funds right from your
checking account).

NOTE: If putting aside cash is a problem for the next two weeks (one pay
period)do this two or all of the saving options below...

1. bring a lunch at work...savings $50-80 dollars
2. brew your own coffee at home or bring in your own tea bags
sugar, etc....($10-20 dollars)
3. do not purchase a soda...savings $10-15 dollars

This will save you $115 max or $70 minimum. This is just an estimate of
your possible savings.

Majestique's List of 10 Fun Things to do this Summer!!!


Ms. Majestique's list of 10 FUN FREE Things to do this Summer!



1- Go see a movie! Yes, FREE! It’s my favorite thing to do! Contact your local theater to see if they offer free kids movies during the summer! If they do, let me warn you… eat a big breakfast and get there about 30 minutes early. The lines can be long! And be prepared for the crying babies and other shananagins. But really, who cares.. it’s FREE!
2- Take a HIKE! … Visit your local park and walk the trail. Take pictures, collect leaves, see if you can find any animals hiding in the bushes!
3- Play double-dutch or catch! Bring the old school back! Teach them that it doesn’t have to have an on and off switch to be fun!
4- Go for a Bike Ride. Lots of parks are bike friendly! If your family is a biking one… make an afternoon of it! You get plenty of fresh air, sunshine. Exercise and the children will sleep better that night!
5- Visit a museum! Most of them are free! So, pack a cooler for afterwards and head to the nearest museum! Most museums are kid friendly and may even offer a scavenger hunt for them! Call ahead to see. If not, make your own!
6- See who’s serving dinner for FREE! Most restaurants have a “Kids Eat Free Night”… have your child surf the net for who’s serving what for FREE! Make a calendar and viola… FREE DINNER… (for the kids) and a No Cook Zone night for you!
7- Have a Tea Party… complete with cookies and Lemonade! For boys.. have a Soda Mixer! (Same concept as a Tea Party.. just use kids frosty mugs and pretzels.- allow scratching and plenty of burping to make it fun!)
8- If you have a pool in your backyard or neighborhood …. that’s awesome! ENJOY. If not, consider the good old fashioned sprinkler system or a fun water balloon fight! Aim low! We don’t want any trips to the E.R.
9- Arts and Crafts! Use whatever you have laying around the house!... Macaroni, rice, beans, paper, glue, sissors, and paint. Spread out the newspaper and let them be creative! You’ll be surprised at what they come up with! Just be prepared to put it on display.
10-Head to your local library for story time! Just call ahead to see if and when they offer it!

So, now that I’ve started you on your way… this will keep the children busy for at least a week…. It’s up to you to find something for next week!  If you find anything else that’s fun and FREE….. let me know!

Majestique Recipe! Bowtie Pasta & Spinach!

This recipe was shared with me by my good friend Ryan (thanks girl!)! We love it so much.. it is quick, easy, and filling! I decided to share it with my blog friends because a few of them have growing boys with appetites to match! This will make a great after school snack! Also, with summer approaching, this also makes a terrific side dish! ENJOY!




Bowtie Pasta and Spinach!
(For Gluten Free option, use Gluten Free Pasta)
30 minutes Prep and Cook Time combined.
Makes 12 servings!

1 (12oz.) Package Bowtie or Penne Pasta
2 Tablespoons Olive Oil
6 Slices of Bacon Chopped
2 Tablespoons minced Garlic
1 14.5 oz. can diced tomatoes
1 bunch fresh chopped spinach (or 1 cups frozen, rinsed, and drained chopped spinach)
Salt & Parmesan Cheese

1. Boil Pasta in lightly salted water- add pasta and cook until tender and ready.
2. Heat 1 tablespoon olive oil in medium skillet, add bacon and FRY!
3. Add Garlic to skillet; stir fry with bacon for about 1 minute.
4. Stir in tomatoes, cook until heated through.
5. Place spinach in colander and drain the hot pasta over it so it wilts.
6. Transfer to large serving bowl and toss with remaining olive oil.
7. Add bacon, garlic, and tomato mixture.
8. Add a pinch of salt if needed.
9. Garnish with Grated Parmesan Cheese.

Serve warm, at room temperature or chilled!

Majestique Halloween Treats from Kraft!!!!

So, as you know, I love Halloween! Maybe because my birthday is on the 1st.. so I like to bring it in with the Spooktacular Celebration of All Hallows Eve! Each year, my daughter and I prepare a few snacks and treats to share with some friends, watch some “scary” movies, and tell spooky tales! Most people would think… “Where do you find the time?” What they do not realize is putting together a little Halloween fun does not have to be a time consuming task. Here are a few Kraft recipes for your Halloween party snacks…Majestiquely quick and yummy! We have tried them all!!!

Monster Claws with Dipping Sauce

total time -30 min
prep - 15 min
servings - 4 servings

What You Need
4 small boneless skinless chicken breasts (1 lb.), cut lengthwise in half
1 pkt. SHAKE 'N BAKE Extra Crispy Seasoned Coating Mix
1/4 red pepper, cut into 8 triangular pieces
1/2 cup KRAFT Original Barbecue Sauce
(Majestique tip- SUPEREASY - You can prepare with Tyson’s Chicken Strips- Heat and Go!)
Make It
HEAT oven to 400ºF.
COAT chicken with coating mix as directed on package. Place on baking sheet sprayed with cooking spray.
BAKE 13 to 15 min. or until chicken is done.
MAKE 1/2-inch slit in thinner end of each chicken strip; insert red pepper triangle in slit for the monster's claw. Serve with barbecue sauce.

Family Fun
Arrange 4 claws on large serving plate to resemble each of the monster's 2 hands.
Substitute
Prepare using BULL'S-EYE Barbecue Sauce.

Easy Ghost Cookies

total time- 45 min
prep - 45 min
servings - 18 servings, 1 cookie each

what you need
1 pkg. (6 oz.) BAKER'S White Chocolate
18 NUTTER BUTTER Peanut Butter Sandwich Cookies
Decorating gels and/or assorted small candies
Make It
MICROWAVE chocolate in medium microwavable bowl on HIGH 1-1/2 minutes or until chocolate is completely melted, stirring every 30 seconds.
SPREAD chocolate onto one side of each cookie for the ghost's "body." Cool slightly.
DECORATE with gels and/or candies to create "faces." Cool until chocolate is set.

Place decorated cookies in small gift bags to give to trick-or-treaters.
Family Fun
For a quick Halloween dessert, prepare JELL-O Chocolate Instant Pudding as directed on package; spoon into dessert cups. Refrigerate until ready to serve. Garnish with decorated cookies just before serving.
How to Make Just a Few Ghosts
If you want to make only a few ghosts, remember that 1 melted chocolate square is enough to frost about 3 cookies.


Mummy-Face Pizzas


total time- 15 min
prep- 5 min
servings- 2 servings

What You Need
1 plain bagel (3-1/2 inch), cut horizontally in half
2 Tbsp. pizza sauce
2 sticks KRAFT STRING-UMS String Cheese
4 slices black olives
Make It
HEAT oven to 400ºF.
SPREAD bagel halves with sauce. Pull cheese into thin strips; place in random criss-cross fashion on tops of bagels to resemble mummy bandages. Trim ends with kitchen shears. Add olives for the eyes.
PLACE on baking sheet.
BAKE 10 min. or until bagels are crisp and cheese is melted.
